I'm just wondering which working out is correct, as I am confused.

1)
I live in Greece (GMT + 2).

I wanted to work out what time GMT-8 would be in Greece (GMT +2).
I'm assuming if somebody just says GMT-8 -> it would be midnight there so 12am GMT -8 is equivalent to GMT -8.

My solutions:
a)
00:00 (24:00)-> 24- 8 = 16:00 (GMT) -> 16:00 + 2 = 18:00 GMT + 2
Alternative: GMT -8 + GMT + 2 = GMT -6. 24 -6 = 18. 18:00 GMT + 2.
b) 00:00 (24:00)-> 24+ 8 = 08:00 (GMT) -> 08:00 + 2 = 10:00 GMT + 2
Alternative: GMT +8 + GMT + 2 = GMT +10. 24 +10 = 34. 10:00 GMT + 2.
Which solution is correct?

2)
What time would 3pm GMT -8 timezone be in GMT+2?
My Solutions
a)
3pm (15:00)-> 15- 8 = 07:00 (GMT) -> 07:00 + 2 = 09:00 GMT + 2
Alternative: GMT -8 + GMT + 2 = GMT -6. 15 -6 = 9. 09:00 GMT + 2.
b)
3pm (15:00)-> 15+ 8 = 23:00 (GMT) -> 23:00 + 2 = 01:00 GMT + 2
Alternative: GMT +8 + GMT + 2 = GMT +10. 15 +10 = 25. 01:00 GMT + 2.

Which solution is correct?

I personally think solution b for both.
1)
Solution a works it out for 16:00 GMT -8 -> It is not GMT
2)
Solution a works it out for 07:00 GMT -8 -> it is not GMT

Dear confused :

there is no time GMT-8

That is a time zone.

If it was 4 pm in London

You would add 2 hours to get Greece time

= 6 pm.

How simple is that ?

If you are GMT+2 then GMT-8 is 10 hours behind whatever your current time is, just subtract 10 hours from your present time.
